How I cook vegan fried wonton noodles

On a traditional Chinese lunch or dinner table you will always find some fried noodles! There are lots of variants, always quick & easy to cook, always yummy, and always very popular.

 

Now I show you one vegan fried noodle recipe you can have for every occasion cooked within a couple of minutes, if you have all ingredients at hand.

Quick & easy: vegan fried noodles

Fried noodles are a classic dish in Chinese cuisine, everyone loves. There are lots of types of noodles you may use for fried noodles. You just have to look out they are vegan.

 

My favourite noodles are thin rice noodles. But for this recipe I used thin wonton noodles, because the portions you have in a package are small and therefore more practical than many other packed noodles, that often make one huge serving per portion in a package.

Ingredients

  • 1 or 2 portions of dried wonton noodles
  • 2 (stalks) spring onions (Chinese or Western)
  • 1 half red bell pepper
  • 2 slices of ginger
  • 1 clove garlic
  • 1 handful of soybean sprouts
  • 3 table spoons soy sauce
  • some peanut oil for frying

Instructions

  • Cut the spring onion into rings or 1-inch-pieces
  • Cut the bell pepper into thin long strips
  • Slice the ginger from a fresh piece of ginger and cut them into fine strips
  • Rinse the soybean sprouts and put them aside to drip-dry
  • heat some water in a medium-sized pot and put the noodles in for not more than 5 minutes
  • strain the noodle and put them aside
  • heat the peanut oil in a wok
  • put the veggies in and stir for not more than 2 minutes
  • add the noodles and stir
  • add the soy sauce and stir for not more than 2 minutes
  • serve the noodles

This vegan recipe serves one person with a healthy portion or 2 persons with a smaller portion each as a starter or snack. 

 

I recommend some of my home-made chili oil with the fried wonton noodles to spice things up. Enjoy!
