How to make the perfect tomato sauce

A great tomato sauce is one of the most important and most basic things in Italian cooking. It is pure and simple. Therefore the ingredients must be great. Otherwise it becomes a fail, and you would be better off with some good quality ready-to-eat tomato sauce from the jar.

Tomato sauce is an important base in many cuisines all over the world. I give you a pretty basic recipe here, that can be modified easily to your taste or matching to the dish you need.

 

Like in every simple dish, quality is absolutely key: only the best quality tomatoes will do. The tomato sauce can be prepared within a few minutes, and it will be better and cheaper than any tomato sauce from the supermarket. 

Ingredients

1 can of Pelati or San Mazerano tomatoes

1 small glass of tomato paste

1 table spoon of quality olive oil

1 tea spoon of sugar

1 peeled clove of garlic

salt & pepper to taste

other spices, if required, like peppers, chilies, cinnamon, etc.

other ingredients, if required, like olives, herbs, capers, etc.

Instructions

  • Put everything into a stirring pot and blend it with a hand-held blender.
  • Add tomato sauce to the food in the cooking pot or pan, or warm it up on low heat to serve separately.
  • Put the rest of the tomato sauce in a tightly sealed jar and store it in your fridge.

This recipe will be enough for many servings.

If you are looking for some extraordinary or posher versions, add the juice of a blood orange or a double tequila or double vodka to the tomato sauce and stir well.
