Bruschetta - my way!

Bruschetta is one of the most famous Italian appetizers served in restaurants all over the world.

There are some variations, but the classic still remains unbeatable.

I created my own way of preparing Bruschetta.

Bru-scattering your taste buds

Of course, my way of making bruschetta is something more intense than the classic. I mean this not only in taste, but also in quantity, too. Such a bruschettaed ciabatta make one complete meal for me.

You my share it with another person or serve it as appetizer, like it's classicly done.

Hear my golden rule of making simple dishes: Here it is even more important of using highest quality only ingredients, because every flaw will show instantly!

Wash and cut 350 g quality tomatoes like shown above: halves, quarters, core out, stripes, dices. Put them in a bowl. Add quality salt and fresh pepper to taste.

Cut one white and one red onion into fine dices and add them to the bowl.

Cut two cloves of garlic into fine diced and add them to the bowl.

The higher content of onions and garlic does not just more taste to the bruschetta spread, but makes it great for detoxing your body, too.

People who know me, they know it: I like it hot! Therefore get one red hot chili pepper and cut it into fine rings. For those who does not like it so hot, cut out the inside stuff of the chili before cutting it into fine rings. Use latex gloves for this process. Add the hot stuff to the bowls as usual.

Get 200 g of basil and 100 g of parsley washed. Get rid of the stems and cut your herbs into fine pieces. Add your herbs to the bowl as well.

Nutritional facts: Basil is a great supplier of vitamin k. Parsley gives you much vitamin c and vitamin k, too. The tomatoes give you one more time a high dose of vitamin c and are known for a rich content of antioxidants.

Add a dash of best quality crema aceto balsamico.

Add 4 tablespoons of best quality olive oil.

Mix everything well in your bowl.

Put your bowl into the fridge for at least some hours or better overnight for all the aromas of the ingredients can spread well.

When it's time to eat, prepare a fresh ciabatta like this: Cut it horizontally in two halves, cut it vertically in two halves. Now you have four pieces. Cut each of those pieces in halves again.

You now have eight pieces of ciabatta bread.

By the way: I bought some organic olive-parmesan ciabatta. Very delicious! There is vegan ciabatta out there, too. Ask the staff at your bakery.

Now spread the delicious content of your bowl over the ciabatta and serve. The indicated ingredients for the ciabatta spread are enough for one and a half ciabattas. Your lunch or dinner or party is now saved.
